Some people believe that a healthy diet is one in which you need to skip dessert. It is not so. You can easily prepare mouth-watering desserts that are both healthy and tasty. Here, I will outline some healthy dessert recipes that you will always feel like going back to. They are prepared keeping conventional desserts in mind. They have improved on conventional desserts by lowering the fat content in a variety of ways, one way being using an artificial sweetener instead of actual sugar. Enjoy making these wonderful recipes.

Red Velvet Mini Cupcakes

This dessert was essentially a very fattening one. It has been cut down into smaller serving sizes and the proportion of fat and sugar have been reduced to give you a more healthy dessert. You can now make and eat them guilt-free.

Ingredients:

1 1/2 cups whole wheat flour

1/2 cup lowfat buttermilk

1 teaspoon pure vanilla extract

1/2 teaspoon salt

2 tablespoons unsweetened cocoa powder

1 cup reduced-fat cream cheese

1 teaspoon white vinegar (distilled)

3/4 cup canola oil

1 large egg

3/4 cup granulated sugar

1 cup confectioners’ sugar

1 tablespoon red food coloring

1 teaspoon baking soda

Instructions:

  1. Your oven should be preheated to 350 degrees F. Take forty eight mini muffin cups and line them. Use paper liners.
  2. Whisk flour, 1/4 tsp salt and cocoa in a medium-sized bowl.
  3. Beat oil plus sugar in a large bowl at medium to high speed using a hand mixer in.
  4. After this add eggs and beat until you get a well blended mixture.
  5. Add the food colouring to this mixture plus 1/2 tsp of vanilla.
  6. Continue to blend the mixture at a low speed. Then add the previously made flour mixture, followed by buttermilk. Follow this up with flour again and repeat till everything is well blended.
  7. Whisk baking soda and vinegar in another bowl. When this is complete, add them to the above mixture and fully incorporate it into the blend.
  8. Divide the cupcake batter equally among the muffin cups and keep it in the preheated oven. You will need to bake it for 18-20 min. To check whether the cupcakes have come out well, dip a toothpick in each muffin. If it comes out without batter sticking on it, then your baking is complete. Do not over bake these muffins or they will turn out to be dry.
  9. Let the cupcakes dry on the table.
  10. Beat cream cheese inside a bowl. Make sure that it is fluffy and smooth. Add confectioners’ sugar and remaining salt and vanilla to this mixture and beat. Your frosting is made now. You can spread them out on the top of your cupcakes. Or else, you can squeeze it out of a cone to make a design.

Mini Carrot Cakes (with a glaze of Cream Cheese)

Carrot is very healthy for your body and adding it to your dessert is a very easy way of making your dessert healthy too. A glaze of cream cheese adds an aesthetic appeal to these cakes.

Ingredients

For the cake:

1/2 cup pecan halves

1 1/2 teaspoons baking powder

3 cups carrot (shredded)

1/2 cup 2% Greek yogurt

1 teaspoon ginger (ground)

1/2 teaspoon salt

1 teaspoon baking soda

1/3 cup vegetable oil

1 teaspoon cinnamon (ground)

3 eggs (large)

1/2 cup light brown sugar

1 teaspoon lemon zest (finely grated)

1 teaspoon pure vanilla extract

1 1/2 cups whole wheat pastry flour

For the glaze:

2 tablespoons 1/3 less fat cream cheese

1/4 teaspoon pure vanilla extract

1 teaspoon lemon juice

1/2 cup confectioners’ sugar

Instructions:

  1. Make sure that you preheat the oven to 350 degrees F.
  2. Spread out the pecans on a baking sheet. Bake them till they are toasted. This usually requires about 10-12 minutes. Allow them to cool. Follow this by finely chopping them in a food processor or by hand.
  3. Mix the chopped pecans, baking powder, flour, cinnamon, baking soda ginger, salt in a mixing bowl.
  4. Blend together the yogurt, brown sugar, oil, lemon zest, vanilla extract, eggs in a different bowl.
  5. Add and mix carrots into the above egg mixture.
  6. Carefully fold the above mixture into the flour mixture made in Step 3.
  7. Your mixing job is over. Divide the mixture equally among the pans for baking.
  8. Bake for about 20-22 minutes. The centre of the cakes will be bouncy at this time. Allow these cakes to cool.
  9. To prepare the glaze, mix confectioners’ sugar, lemon juice, cream cheese, salt and vanilla extract in a bowl. One teaspoon of this glaze can be added on top of each piece of cake. Garnish it with pecans, nuts or anything that you desire.

Strawberry Shortcakes

Fresh orange juice and strawberries used in dessert will not only make it sumptuous but will also reduce the amount of junk you intake in other desserts and replace it with healthful fruits. This beautiful dessert to make your taste buds water!

Ingredients:

6 spongecake dessert shells

1 cup orange juice

1 tablespoon cornstarch

¼ teaspoon vanilla/almond extract

1 tablespoon calorie-free sweetener

1 ½ cup fresh strawberries (sliced)

Instructions:

  1. In a small saucepan, mix cornstarch and sweetener till the mixture is smooth
  2. Add orange juice to this mixture. Keep heating it in the saucepan till the mixture comes to boil.
  3. Continue to stir this boiling mixture. In some time it will become thick and bubbles will emanate from it.
  4. At this point, take the mixture off from the heat and cool completely this mixture completely.
  5. Mix strawberries and orange juice together. Stir them till they are well mixed.
  6. After mixing, chill the combination for a minimum of half an hour.
  7. With tablespoon, add this chilled mixture on top of spongecakes and serve it to your guests
