2 Oriental Soup Recipes.


Rainy season is just around the corner. Rainy season is followed by the much loved winter, and one cannot deny that rainy season is the beginning of the beautiful winter. Rainy and winter season means eating of warm food, which we had been avoiding throughout the whole summer. One of such foods is Soup. Soup is one such liquid which is extremely filling and healthy. They become a part of our diet during this time of the month. It is hard to find someone who isn’t fond of soups. These soups become even more loved when one makes the oriental soups. The thing about soups is that they are like a mini meal. But this mini meal loses much of its nutritional value when one uses the ready to make soups, which seems to be really in these days.  Here is a way of making those well-loved ready-to-make soup on your own, without the help of those packets and enjoy them.

1 Sweet Corn Chicken Soup:

Sweet corn chicken soup is one of the most ordered soups not only in the Chinese restaurants but also in the other restaurants, in India. Every time one is out, the only soup they want to drink is the Sweet Corn Chicken Soup. But your days of going out to drink this particular soup are gone, as you can now make it at home with this simple recipe. In case you are a vegetarian, omit the chicken from the recipe and add vegetable stock instead.  You can also use Maggie seasoning cubes to make the vegetarian stock.

200g chicken breast, boneless

200g sweet corn kernels

1 tin cream style sweet corn

1 egg

Salt to Taste

4 tbsp corn flour, mixed in cold water

1 ltr chicken stock

½ tsp white pepper powder

1 tsp sugar


1 Wash the chicken well and mince it in a fruit processor.

2 Boil 3 cups of water in a pan, add the chicken mince and cook till done.

3 Set aside.

4 Coarsely grind the corn kernels in a food processor or you can even use them whole.

5 Heat the stock in a pan and bring it to a boil.

6 Add the sugar and the sweet corn kernels and cream style sweet corn.

7 Lower the flame and heat till the mixture nearly starts boiling.

8 Add the cooked chicken minced.

9 Beat the egg in a bowl and season with salt.

10 Pour the beaten egg and stir quickly.

11 Remove the mixture from the heat.

12 Serve Hot.

Serves: 4-5

Note: Chicken cubes can also be used for making the stock. Keep stirring while pouring the egg into the soul in order to make thin strands of the egg.

2 Hot and Sour Vegetable Soup:

This is another soup which is a great hit among the people of all age, who love their spices. This soup just like Sweet corn soup is something which all go out for in India. The sour taste of the soup comes from the vinegar which is added to the soup. So here is your chance to make this soup for yourself at home and enjoy it within the luxury of your house and according to your mood.


4-5 dried mushrooms or Fresh mushrooms

1 carrot, finely chopped or grated

¼ cup Chinese cabbage finely chopped.

50g tofu, finely chopped

5-6 french beans, finely chopped

50g bamboo shoot

1 tsp oil

1 ltr vegetable stock

1 tbsp soya sauce

2 tbsp corn flour, diluted in cold water

½ tsp white pepper powder

4 tbsp vinegar

For the Chili Garlic Paste:

3 dried red chilis, de-seeded and soaked in water for 10 minutes

2 flakes garlic

1 tsp vinegar

1 tbsp oil

2 tbsp water


For the Chili Garlic Paste:

1 Soak the dry red chilies in the water for 10-15 minutes.

2 Drain the chilies and grind with the garlic, vinegar and water in the small jar of a blender.

For The Soup:

1 Boil 2 cups of water in a pan.

2 Add the dried mushrooms and bring to a boil.

3 Let the mushroom soak in the hot water for 20-30 minutes.

4 Drain and squeeze out the excess water from the mushroom and chop the mushrooms finely. If you are using fresh mushrooms, then just peel and wash them and chop them finely.

5 Combine the corn flour in ¼  cup of water and keep aside.

6 Heat the stick in a pan and bring to a boil.

7 Add the mushrooms, carrots, cabbage and beans.

8 Cook for 2 to 3 minutes.

9 Add the bamboo shoots and soya sauce.

10 Also add the earlier prepared chili garlic paste.

11 Bring to a boil and simmer it for about 5 minutes.

12 Add the white pepper and the vinegar to the simmering soup.

13 Stir in the corn flour mixture and simmer for a couple of minutes, till the soup thickens.

14 Serve Hot in soup bowls.

Serves:  4

Note: To prepare the Chicken Hot and Sour Soup, add half cup of boiled and shredded chicken and finish it by pouring in one beaten egg white, after thickening the soup with corn flour to form egg threads.
